Healthy White Chicken Chili with Greek Yogurt

I wanted something hearty and healthy to make. It was cold outside and I didn’t really want to have to run to the store so I looked through my cupboards and found the following ingredients. I knew right away the perfect meal was Healthy White Chicken Chili with greek yogurt. Ooh yes this was going to warm me up and satiate me. It also would have leftovers that I could freeze for easy lunches when I work from home.

The beauty was that it only took me 7 minutes to prep and 15 minutes to cook! It just doesn’t get much easier than that. I did have shredded chicken already made so that saved on time. You could also use rotisserie chicken instead of boiling your own chicken breasts.

Instructions

  1. Boil chicken breasts and shred, or use rotisserie chicken.
  2. In a large pot saute onion until translucent
  3. Add broth to the onions
  4. Add chicken, corn, chillies, beans
  5. Simmer for 15 to 20 minutes.
  6. Add greek yogurt and stir well
  7. Toppings optional, fresh cilantro, diced avocado, shredded mozzarella, tortilla strips

Healthy White Chicken Chili with Greek Yogurt could not be any easier and it is so delicious. I always double the batch so I have plenty to freeze to eat on another day. What is better than a hot bowl of chili for lunch? Not much! Stay warm on these cold days with this chili recipe!
