Healthy Chicken Meatballs

Now that school is back in session I try to prep meals for the busy nights. I always make extra so I can freeze leftovers. I made a giant batch of these healthy chicken meatballs intending to freeze them for quick and healthy meals once school starts but we ate them all. I use all white ground chicken but for juicier meatballs, consider a mix of ground 🦃.

Life gets so busy as school starts and sports gets back in action. BB and I love to have ready made meals in our freezer so we can continue to feed our family home cooked meals that are healthy and delicious. It’s just not physically possible to make fresh meals every night. By prepping ahead of time it keeps us out of restaurants and the drive thru.

BB makes here own Homemade Tomato Sauce which is a super easy recipe and is fabulous. She likes to make big batch and freezes them in quart size jars. I always make extra healthy chicken meatballs and freeze them in glass containers. Mix these two items with pasta and you have a delicious and easy dinner!

Start by preheating oven to 350 degrees

Instructions

  1. Preheat oven to 350
  2. Mix all the ingredients together in a large bowl
  3. Form 1.5 inch balls and place them on a cookie sheet.
  4. Bake until internal temp reaches 160. (We love this meat thermometer)
