Delicious French Onion Soup. By Binks in honor of BB.

When BB and I were young, one day I took her to Vie de France at the Galleria in Edina, Minnesota. We ate French onion soup and probably 8 baguettes and laughed and had the best time ever. I don’t know how old we were but clearly I was old enough to drive so somewhere between 16 and 17 which would make her 10 or 11. We had so much fun at this fancy restaurant which we thought was fancy but probably actually wasn’t. I'm posting this memory and recipe for French onion soup in honor of my baby sister. Who knew we'd be working together so many years later.


Ingredients:
6 tablespoons butter
2 cloves garlic minced
64 ounces beef broth
3 cups sliced onions
1 tablespoon tablespoon brown sugar
3 tablespoons flour
1 tablespoon Worcestershire sauce
2 bay leaves
Salt and pepper to taste
Bread 4 slices
2 cups sharp cheddar shredded

Directions step by step:
Slice onions thinly and shred cheese. I use my OXO multitasking Good Grips Complete Grate and Slice Set.



Melt butter over medium heat. Add onions, garlic and brown sugar and cook for about 10 minutes stirring frequently. Turn down heat slightly and cook for another 10 minutes stirring occasionally.

Add 1/2 cup broth and sprinkle in the flour and cook until mostly absorbed stirring as needed.

Add rest of broth, bay leaves and Worcestershire sauce. Bring to low boil then turn down heat to simmer for 20 minutes or longer.

While soup is simmering broil sliced bread topped with shredded cheddar until brown and bubbly. I use this amazing sheet pan to crisp bread on both sides. Here is a similar one.

Ladle soup into bowls and top with cheesy bread.
