This delicious and simple cake is great for a low carb or keto diet. It’s a healthy alternative to sugary treats.
Preheat oven to 350.
5 large eggs
1 stick of butter melted and cooled
1/2 teaspoon kosher or sea salt
1 teaspoon vanilla extract
1 tablespoon freshly squeezed lemon juice. Add zest if desired.
2 cups almond flour
1/2 cup Swerve sweetener
2 teaspoons baking powder
Mix wet ingredients one at a time and stir with whisk until incorporated. Add almond flour and baking soda and stir until combined.
Spray baking loaf pan or bundt pan and line with parchment paper for easy removal.
Bake for 30-40 minutes. Cake will be done when a toothpick comes out almost clean. Be careful not to over bake.
Top with whipped cream. Enjoy!
